Sylvino is the creation of Sylvain, a Swiss-italian, second generation viticulturist and wine maker, his partner Prue and their friends & family. It was formed on Peramangk country in the Adelaide hills of South Australia.
Sylvain was raised in a wine making family in the Italian region of southern Switzerland. His parents, Eric & Fabienne Klausener, were among a group of trailblazers who found their way to Ticino in the early 1980’s from the french region of Switzerland. They went onto become renowned winemakers in Switzerland and raised their four children amongst the vines. This is the world Sylvain was born into and you could say, it is in his blood.
In his early adulthood he travelled across Australia and Asia and it was high up in another mountain region Darjeeling, India, that he met Prue. Prue had come from years working in the organic produce industry in Australia and was devoted to environmentally conscious food production.
After returning to Switzerland to complete his formal apprenticeship under his father and continue to work in the family business an interest in organic and biodynamic practices sprouted as did a call to create their own story.
So with their two daughters in tow they headed back to Australia and found themselves in the Adelaide hills and unbeknownst to them, right in the centre of the renowned Adelaide hills natural wine community.
Impassioned and inspired, the vines called and soon after they found a vineyard that had been neglected for some years and through some consideration, consultation and TLC , the beginnings of Sylvino emerged.
"Growing, not just organic grapes, but grapes that support the land that they are grown on is at the heart of our approach. Our vines are tended by hand, we listen to the seasons and nature is obeyed. From this approach to our vines we create the foundation of delicious natural wine".
Minimal intervention, lots of experimentation, and only making what they grow from a single vineyards ensures each Sylvino wine is unique.
This is their philosophy of a truly organic product.
Forest Jus 2021
A cool climate Sauvignon blanc from the Adelaide hills. Grown, harvested and pressed by the hands of Sylvain and the folk of Forest range. Wild vine growth philosophy, conscious cutting and minimal intervention. No sulphites added, maceration on skins. The result; a fruity and balanced sauv blanc with notes of ginger and peach, the perfect gateway into the world of natural wine.
Forest Jus 2022
The love child of our second South Australian vintage. A cool climate 100% Sauvignon blanc from the beautiful Peramangk lands (Adelaide hills). Grown, harvested and pressed entirely by us. Wild vine growth philosophy, conscious cutting and minimal intervention.
No sulphites added, maceration on skins.
The result; a fruity and balanced sauv blanc with lots of deep complexity and hints of ginger.
The utlimate companion to fish or an action packed curry.
Sylvino grapes are farmed on unceded Peramangk country. We continuously honour and pay our respects to the traditional custodians of this land and endeavour to honour their knowledge and land management by upholding a spiritual relationship with the land and learning and sharing traditional practices.
